In recognition of National Nutrition Month, enjoy two delicious recipes that put a spotlight on chia seed, one of our favorite superfoods and supertrends. The ancient Mayan’s thought the same – chia is Mayan for “strength.”

Recipe: Caramelized Banana Overnight Oats with Nuts, Chia, and Coconut

Caramelized Banana Overnight Oats

 

1/2 cup of oatmeal 
2 tablespoons of chia seeds
1/2 of milk or nut milk
Dash of salt
1 tsp. of vanilla

For toppings:
½ of a banana, sliced
1 tbs. maple syrup.
2 tbs. shredded coconut
2 tbs. chia seeds
2 tbs. nuts of choice (we used pecans)


 

Mix oatmeal, milk of choice, salt, and vanilla in a bowl or mason jar. Refrigerate overnight. When are you are ready to eat, heat up a greased skillet over medium heat. Dip banana slices into maple syrup and layer them over the skillet, cooking for 1-2 minutes on each side until caramelized. Add caramelized bananas and your toppings of choice to the oatmeal, and enjoy!

 

Recipe: Chia Pudding Smoothie Swirl

Chia Smoothie Bowl

Chia Pudding
1 cup milk of choice
¼ cup chia seeds
1 tsp. vanilla extract
1 tsp. maple syrup or honey
Smoothie
1 cup milk of choice
½ cup of frozen yogurt
1 scoop of protein powder of choice
¾ cup of fresh or frozen berries
1 banana
Ice if desired

Mix milk of choice, chia seeds, vanilla, and maple syrup or honey in a small bowl. Let sit for 10-15 minutes to thicken. Blend smoothie ingredients and pour into chia pudding bowl. Top with any fresh fresh fruit, nuts, or other desired toppings, and enjoy!
