Glanbia Nutritionals brings innovative cheese solutions to markets worldwide. We consistently deliver high-quality cheese with a focus on flavor, texture, and functionality.

The Cheese Innovation Center in Twin Falls, Idaho gives our customers access to a network of resources and the center’s pilot-production facility streamlines the process of moving new cheeses from concept to full-scale production. 

Once perfected the cheese is produced at one of our production facilities in Idaho, New Mexico, or Michigan. Each plant has unique capabilities that make them suited for certain cheese types, formats, and applications.

Core Capability Platforms

Affordable Artisan

Affordable Artisan cheeses focus on making specialty cheeses more accessible. Our dedicated cheese scientists utilize unique cheese-making tools at our Cheese Innovation Center, we match the color, flavor, texture, and functional characteristics of specialty cheeses from around the globe and scale them up using our domestic production techniques.

Barrels

Our best-in-class barrels are produced at our Gooding, Idaho facility in 540 lb. format. They are designed with functionality in mind and provide consistent, high-quality natural cheese for processing.

Blended

Our blended cheeses are two or more cheese types blended into a single block. A blended cheese includes both marbled-style (a 50/50 blend created by two vats of cheese made with the same milk composition,  primary culture, and make time but, different adjunct cultures and colors, and blending them before being formed into one block) and mash-up style cheeses (a cheese blend made up of a primary base cheese made in a vat with a secondary cheese, not to exceed 10% of the total blend, added on the finishing table and blended together prior to being formed into one block).

Cheeses for Aging

Glanbia Nutritionals has multiple cheese varieties specifically designed for aging. Available in 40 lb. block formats, we have many different cheddar varieties that develop unique and distinct flavor profiles as they age and other cheese varieties that can be aged, such as Gouda, Provolone, and Parmesan. We also have capabilities for age acceleration, using different adjuncts and cultures to achieve aged cheese flavor and texture profiles in a shorter period of time.

Classic

Glanbia Nutritionals Classic cheeses are fully commercialized and available for production immediately. Most are available in both 40 lb. and 640 lb. block format. We consider these cheeses to be our core varieties and we make them day in and day out. 

Examples of our Classic varieties include: 

  • Classic Cheddar (White or Colored) 
  • Monterey Jack 
  • Colby

Flavors & Inclusions

Our Flavors & Inclusions platform includes cheese with any particulate added to the cheese during the cheese-making process. Jalapeno peppers are the most popular, but other inclusions include caramelized onion, chipotle peppers, and garlic and chive. We also can add flavors to cheese to achieve a different flavor profile, such as smoked cheese flavorings allowing for a beautifully smoked flavor profile throughout the entire block

Health & Wellness

Our Health & Wellness cheese platform provides cheeses that deliver increased health benefits to an already healthy snack! Varieties include cheese such as higher-protein cheddar, probiotic cheddar, and Vitamin D fortified cheeses. Our innovative cheese scientists have the capability to work with customers to develop other added benefits that consumers seek, such as immune support ingredients or energy-boosting ingredients! 

One example of our Health & Wellness varieties is High Protein Cheddar.

Organic

We proudly offer the following certified organic cheeses: Cheddar, Monterey Jack, Pepper Jack, Parmesan, Colby Jack, and LMPS Mozzarella. All of our organic cheeses are certified according to the provisions of Title 22, Chapter 11, Idaho Code, Organic Food Products, IDAPA 02.06.33, Organic Food Product Rules, and 7 CFR Part 205 National Organic Program. Organic certification is available in block or barrel format. Other certificates are also available, including Non-GMO project verified, pasture-fed, and many more!
